Hand crafted Applecider!

The name already reveals the ambition.

With his Paladeus Applecider, Michael Bonell has created a cider that can compete in taste and sophistication with other sparkling wines.

“The balanced aroma and fine perlage, which are essential for this, are achieved by the traditional bottle fermentation,” reports Michael Bonell, who allows his cider a full three years of rest on the lees. The fruity freshness of the apple is thus preserved without being pushed into the background.

Of course, the quality of the raw materials, namely the sweet South Tyrolean apples, is also crucial. The mild and sun-drenched climate around Auer in southern South Tyrol creates the best conditions for this.

“What motivates me every day is the cool team behind Paladeus, the fun at work, and the challenge of creating something special with each new cider,” says Bonell. The top priority is the consistently high quality of the product, which is currently delivered in 33-cl and 75-cl bottles and is suitable as a sparkling aperitif, a glass at a stylish reception, or a refreshing companion for the next celebration.

As with any artisanal small business that sees itself as a manufactory, this is only possible if the manufacturer reacts creatively, alertly, and flexibly to rapidly changing circumstances. But at Paladeus, they take the challenge calmly. “Not everything has to go wrong,” is Michael Bonell’s motto.

Paladeus Classico

Sparkling apple cider with a fruity and fresh aroma, with well-integrated acidity. Elegant and fresh with a subtle apple aftertaste. Our cider is made from sun-kissed South Tyrolean apples. The traditional bottle fermentation gives the apple cider its balanced aroma and fine bubbles, without overshadowing the fruity freshness of the apple.

Red Rose Cider

Red Rose Cider is a unique pleasure, produced exclusively with the Red Moon apple variety. This cider is made using the traditional Champenoise method, which gives it a fine natural effervescence. The taste is fruity and fresh, perfectly balanced with a pleasant acidity. The pink-orange color of the cider reflects its lively and refreshing nature. Ideal for those who wish to experience a special cider moment.

Barrique Cider

The barrel-aged apple cider Méthode Champenoise is a masterpiece of cider production. With a maturation period of 60 months and the refinement of the liqueur d’expedition in oak barrels, this cider acquires exceptional depth and complexity. The traditional method gives it a fine effervescence and an intense aroma of ripe apples and light vanilla. On the palate, the cider is balanced and multifaceted, with a golden hue in the glass. Hopped Cider
